The Summer crop, that is. The best of the best is here… the markets are full of summer fruit and veggies.
CORN. Probably one of my favorite summer vegetables…. just had my first bite last weekend. Super simple: grilled corn and then made a homemade harissa aioli to top it off (definitely not needed, just added some extra decadence!) mmm…. mmmm….. mmmmmm!
EGGPLANT: This seriously IS my favorite summer veg. I can’t get enough… if it’s on a menu, I order it. My favorite homemade dishes are eggplant parmesan, Genevieve’s caponata and moussaka.
TOMATOS: Endless possibilities… gaspacho, bruschetta, salsa…
