Spanish Summer Dinner

Last night our great friends Caitlin & Billy had us over to their charming new apartment for a little Spanish inspired summer dinner. It was a delicious, simple meal highlighting all the wonderful veggies from our local farmers markets. I wanted to share this meal, because there was nothing too complicated or fancy and was a perfect meal for a group of friends.
We started with a lovely Sparkling Rose to accompany our appetizers: heirloom tomato bruschetta & roasted padron peppers. Grilled up some bread, rubbed a little fresh garlic on top, and smothered it with delicious fresh tomatoes… easy and incredible.
Our next course was a tasty gazpacho, garnished with cucumber, bell pepper, and freshly baked croutons… perfectly light and full of flavor. And I loved how Caitlin served it on the table in jars for everyone to help themselves (that way i got to add extra croutons to mine!)
Then the best part of the meal came out of the oven and right to the table… a spanish paella filled with shrimp, mussels, squid, chicken and sausage… it was incredibly delicious. Well seasoned, simple, and had the perfect crunchy rice layer at the bottom. I couldn’t get enough… completely over served myself, but it was well worth it! Oh, and I mustn’t forget the Tempranillo that flawlessly pared with the meal.
And of course dessert… which we all had to eat practically lying down on the couch… major food coma. However, the buckwheat cake with a little fresh whip cream and peaches was a ideal ending to the meal, and totally healthy… hello, buckwheat!!
I woke up this morning still thinking about how great it was… and how fun the night was with our friends. Thanks Cate & Billy for the wonderful evening! xx
