Cream of the Crop

Barbie’s Homemade Cranberry Sauce. It wouldn’t be Thanksgiving at our house without it.

2 c sugar

1/4 c cold water

1 lb. raw cranberries (washed and picked over)

1/2 c apricot jam

1/4 c fresh lemon juice

Almonds for garnish (optional)

In a 4qt sauce pan combine sugar and water and bring to a boil. Cook mixture for 5 minutes without stirring. Add cranberries, let cook for 4 minutes. You will start to hear a popping when cranberries begin to burst and become translucent. Remove from heat and stir in jam until well blended.  Mix in lemon juice. Chill before serving. (oh, and mom recommends putting it in a crystal bowl for a beautiful presentation!)
