Caitlin’s Smoked Trout Dip

A few weeks ago Caitlin & Billy had another killer dinner party that we graciously attended with some other great friends. Jimmy and I never turn down an invitation hosted by Caitlin and Billy; the evening is always orchestrated seamlessly, while maintaining a super casual “oh I just threw this together” vibe. Great wine, incredible food, lovely friends — what could be better? Divine cocktails and delicious appetizers upon arrival, in this instance, a delightful blackberry/whisky number accompanied by this A-M-A-Z-I-N-G smoked trout dip with homemade sweet potato chips. Like most of Caitlin’s culinary efforts, there was nothing pretentious or elaborate about it- just really tasty and well executed. We couldn’t get enough of it…. I have honestly been dreaming about it since. It’s just a cool, light, perfect summer appetizer… and the homemade chips really knock it out of the park.
Caitlin is also one of those chefs thats really good at just “winging” it… obviously that comes from experience and just having a knack for it. I am going to try and give more specific guidelines for those of us that don’t typically “wing it,” but I would say to pretty much stick with taste-testing as you go!
Smoked Trout Dip
Smoked Trout – 1/2lb (smoked salmon would also be great)
Cream Cheese – 6 oz …I think its important to get a good quality one.
Greek Yogurt – 2 c.
Lemon Zest & Juice
Bunch of Dill and Mint
Garlic – 2 cloves, minced
Mix it all together in a food processor, then add the trout. Again, just do it all to taste… this is a general guide.
Sweet Potato Chips – Cate used a recipe from Martha Stewart, she omitted the lime and tossed them in the oven again right before we arrived @ 225 to get them extra crisp. Flipping is key and make sure you only do a single layer.
